Wine is an alcoholic beverage made from fermentation of grape juice. The natural chemical balance of grapes is such that they can ferment without the addition of sugars, acids, enzymes, or other nutrients. Although fruits other than grapes can also be fermented, the resultant wines are normally named after the fruit from which they are produced (for example, apple wine) and are known as fruit wine (or country wine). Others, such as barley wine and rice wine (e.g. sake), are made from starch-based materials and resemble beer more than wine; ginger wine is fortified with brandy. In these cases, the use of the term "wine" is a reference to the higher alcohol content, rather than the production process. The commercial use of the word "wine" (and its equivalent in other languages) is protected by law in many jurisdictions. Wine is produced by fermenting crushed grapes using various types of yeast which consume the sugars found in the grapes and convert them into alcohol. Various varieties of grapes and strains of yeasts are used depending on the types of wine produced.
Wine stems from an extended and rich history dating back about 8,000 years and is thought to have originated in present-day Georgia or Iran. Wine is thought to have appeared in Europe about 6,500 years ago in present-day Bulgaria and Greece and was very common in ancient Greece and Rome; the Greek god Dionysos, and his Roman counterpart Liber represented wine. Warren Winiarski (born 1928) is a Napa Valley winemaker and the founder and former proprietor of Stag's Leap Wine Cellars.
Winiarski owns and operates Arcadia Vineyards in the Coombsville AVA of Napa Valley, which produces Chardonnay, Cabernet Sauvignon and Merlot. In 1976, Winiarski won the Judgment of Paris blind tasting for his 1973 Stag's Leap Wine Cellars Cabernet Sauvignon. He oversees the Winiarski Family Foundation, which supports educational and charitable causes, in addition to teaching courses at the St. John's College Summer Classics program in Santa Fe, New Mexico. In 2017, Winiarski was inducted into the 11th class of the California Hall of Fame by Governor Edmund G. Brown Jr. for his global efforts to showcase and preserve the quality and history of California wine. A sommelier (/ˈsɒməljeɪ/ or /sʌməlˈjeɪ/ or /sɒˈmɛlijeɪ/; French pronunciation: [sɔməlje]), or wine steward, is a trained and knowledgeable wine professional, normally working in fine restaurants, who specializes in all aspects of wine service as well as wine and food pairing. The role of the sommelier in fine dining today is much more specialized and informed than that of a wine waiter. The role of yeast in winemaking is the most important element that distinguishes wine from fruit juice. In the absence of oxygen, yeast converts the sugars of the fruit into alcohol and carbon dioxide through the process of fermentation. The more sugars in the grapes, the higher the potential alcohol level of the wine if the yeast are allowed to carry out fermentation to dryness. Sometimes winemakers will stop fermentation early in order to leave some residual sugars and sweetness in the wine such as with dessert wines. This can be achieved by dropping fermentation temperatures to the point where the yeast are inactive, sterile filtering the wine to remove the yeast or fortification with brandy or neutral spirits to kill off the yeast cells. If fermentation is unintentionally stopped, such as when the yeasts become exhausted of available nutrients and the wine has not yet reached dryness, this is considered a stuck fermentation.
The most common yeast associated with winemaking is Saccharomyces cerevisiae which has been favored due to its predictable and vigorous fermentation capabilities, tolerance of relatively high levels of alcohol and sulfur dioxide as well as its ability to thrive in normal wine pH between 2.8 and 4. Despite its widespread use which often includes deliberate inoculation from cultured stock, S. cerevisiae is rarely the only yeast species involved in a fermentation. Grapes brought in from harvest are usually teeming with a variety of "wild yeast" from the Kloeckera and Candida genera. These yeasts often begin the fermentation process almost as soon as the grapes are picked when the weight of the clusters in the harvest bins begin to crush the grapes, releasing the sugar-rich must. While additions of sulfur dioxide (often added at the crusher) may limit some of the wild yeast activities, these yeasts will usually die out once the alcohol level reaches about 15% due to the toxicity of alcohol on the yeast cells physiology while the more alcohol tolerant Saccharomyces species take over. In addition to S. cerevisiae, Saccharomyces bayanus is a species of yeast that can tolerate alcohol levels of 17–20% and is often used in fortified wine production such as ports and varieties such as Zinfandel and Syrah harvested at high Brix sugar levels. Another common yeast involved in wine production is Brettanomyces whose presence in a wine may be viewed by different winemakers as either a wine fault or in limited quantities as an added note of complexity. Sherry (Spanish: jerez [xeˈɾeθ]) is a fortified wine made from white grapes that are grown near the city of Jerez de la Frontera in Andalusia, Spain. Sherry is a drink produced in a variety of styles made primarily from the Palomino grape, ranging from light versions similar to white table wines, such as Manzanilla and fino, to darker and heavier versions that have been allowed to oxidise as they age in barrel, such as Amontillado and oloroso. Sweet dessert wines are also made from Pedro Ximénez or Moscatel grapes, and are sometimes blended with Palomino-based sherries.
Under the official name of Jerez-Xérès-Sherry, it is one of Spain's wine regions, a Denominación de Origen Protegida (DOP). The word sherry is an anglicisation of Xérès (Jerez). Sherry was previously known as sack, from the Spanish saca, meaning "extraction" from the solera. In Europe, "sherry" has protected designation of origin status, and under Spanish law, all wine labelled as "sherry" must legally come from the Sherry Triangle, an area in the province of Cádiz between Jerez de la Frontera, Sanlúcar de Barrameda, and El Puerto de Santa María. In 1933 the Jerez denominación de origen was the first Spanish denominación to be officially recognised in this way, officially named D.O. A steep vineyard overlooking the Mosel River
Mosel (German: [ˈmoːzl̩] ⓘ) is one of 13 German wine regions (Weinbaugebiete) for quality wines (Qualitätswein, formerly QbA and Prädikatswein), and takes its name from the Mosel River (French: Moselle; Luxembourgish: Musel). Before 1 August 2007 the region was called Mosel-Saar-Ruwer, but changed to a name that was considered more consumer-friendly. The wine region is Germany's third largest in terms of production but some consider it the leading region in terms of international prestige.
The region covers the valleys of the rivers Mosel, Saar, and Ruwer from near the mouth of the Mosel at Koblenz and upstream to the vicinity of Trier in the federal state of Rhineland-Palatinate. The area is known for the steep slopes of the region's vineyards overlooking the river. At 65° degrees incline, the steepest recorded vineyard in the world is the Calmont vineyard located on the Mosel and belonging to the village of Bremm, and therefore referred to as Bremmer Calmont. The Mosel is mainly famous for its wines made from the Riesling grape, but Elbling and Müller-Thurgau also contribute to the production, among others. (Full article...) -
Cabernet Franc is one of the major black grape varieties worldwide. It is principally grown for blending with Cabernet Sauvignon and Merlot in the Bordeaux style, but can also be vinified alone, as in the Loire's Chinon. In addition to being used in blends and produced as a varietal in Canada and the United States, it is sometimes made into ice wine in those regions.
Cabernet Franc is lighter than Cabernet Sauvignon, making a bright pale red wine that contributes finesse and lends a peppery perfume to blends with more robust grapes. Bombino bianco is a white Italian wine grape variety planted primarily along Italy's Adriatic coast line, most notably in Apulia. The vine is prone to high yields and often produces neutral flavor wines. The grape is known under many synonyms throughout Italy including Debit and Pagadebit, names which came from the grape's reputation for being a high yielding and reliable crop for vineyard owners to grow that would assure them that on each vintage they could pay off their debts.
The exact origins of the grape are unknown, with early wine texts speculating that the grape may have originated in Spain. Today most ampelographers believe that the grape is indigenous to southern Italy, with Apulia believed to be the most likely home of the grape. In the 20th century DNA profiling has shown that while Bombino bianco is closely related to Bombino nero, the grape is not color mutation but its own distinct variety. Though Bombino bianco shares many synonyms with Trebbiano Toscano (also known as Ugni blanc), the two grapes are unrelated. DNA research has also shown that Bombino bianco may be one of the parent varieties of the Impigno grape of the Ostuni DOC in Apulia and of the Moscatello Selvatico grape that is also native to the same region. Copia: The American Center for Wine, Food & the Arts was a non-profit museum and educational center in downtown Napa, California, dedicated to wine, food and the arts of American culture. The center, planned and largely funded by vintners Robert and Margrit Mondavi, was open from 2001 to 2008. The 78,632-square-foot (7,305.2 m2) museum had galleries, two theaters, classrooms, a demonstration kitchen, a restaurant, a rare book library, and a 3.5-acre (1.4 ha) vegetable and herb garden; there it hosted wine and food tasting programs, exhibitions, films, and concerts. The main and permanent exhibition of the museum, "Forks in the Road", explained the origins of cooking through to modern advances. The museum's establishment benefited the city of Napa and the development and gentrification of its downtown.
Copia hosted its opening celebration on November 18, 2001. Among other notable people, Julia Child helped fund the venture, which established a restaurant named Julia's Kitchen. Copia struggled to achieve its anticipated admissions, and had difficulty in repaying its debts. Proceeds from ticket sales, membership and donations attempted to support Copia's payoff of debt, educational programs and exhibitions, but eventually were not sufficient. After numerous changes to the museum to increase revenue, Copia closed on November 21, 2008. Its library was donated to Napa Valley College and its Julia Child cookware was sent to the National Museum of American History. The 12-acre (4.9 ha) property had been for sale since its closure; the Culinary Institute of America purchased the northern portion of the property in October 2015. Burgundy wine (French: Bourgogne or vin de Bourgogne) is made in the Burgundy region of eastern France, in the valleys and slopes west of the Saône, a tributary of the Rhône. The most famous wines produced here, and those commonly referred to as "Burgundies", are dry red wines made from pinot noir grapes and white wines made from chardonnay grapes.
Red and white wines are also made from other grape varieties, such as gamay and aligoté, respectively. Small amounts of rosé and sparkling wines are also produced in the region. Chardonnay-dominated Chablis and gamay-dominated Beaujolais are recognised as part of the Burgundy wine region, but wines from those subregions are usually referred to by their own names rather than as "Burgundy wines". Riesling (/ˈriːslɪŋ, ˈriːzlɪŋ/ REE-sling, REEZ-ling, German: [ˈʁiːslɪŋ] ⓘ) is a white grape variety that originated in the Rhine region. Riesling is an aromatic grape variety displaying flowery, almost perfumed, aromas as well as high acidity. It is used to make dry, semi-sweet, sweet, and sparkling white wines. Riesling wines are usually varietally pure and are seldom oaked. , Riesling was estimated to be the world's 20th most grown variety at 48,700 hectares (120,000 acres) (with an increasing trend), but in terms of importance for quality wines, it is usually included in the "top three" white wine varieties together with Chardonnay and Sauvignon blanc. Riesling is a variety that is highly "terroir-expressive", meaning that the character of Riesling wines is greatly influenced by the wine's place of origin.
In cool climates (such as many German wine regions), Riesling wines tend to exhibit apple and tree fruit notes with noticeable levels of acidity that are sometimes balanced with residual sugar. A late-ripening variety that can develop more citrus and peach notes is grown in warmer climates (such as Alsace and parts of Austria). In Australia, Riesling is often noted for a characteristic lime note that tends to emerge in examples from the Clare Valley and Eden Valley in South Australia. Riesling's naturally high acidity and pronounced fruit flavors give wines made from the grape exceptional aging potential, with well-made examples from favorable vintages often developing smokey, honey notes, and aged German Rieslings, in particular, taking on a "petrol" character. A rosé (French: [ʁoze]) is a type of wine that incorporates some of the color from the grape skins, but not enough to qualify it as a red wine. It may be the oldest known type of wine, as it is the most straightforward to make with the skin contact method. The pink color can range from a pale "onionskin" orange to a vivid near-purple, depending on the grape varieties used and winemaking techniques. Usually, the wine is labelled rosé in French, Portuguese, and English-speaking countries, rosado in Spanish, or rosato in Italian.
There are three major ways to produce rosé wine: skin contact, saignée, and blending. Rosé wines can be made still, semi-sparkling or sparkling and with a wide range of sweetness levels from highly dry Provençal rosé to sweet White Zinfandels and blushes. Nebbiolo (/ˌnɛbiˈoʊloʊ/, Italian: [nebˈbjɔːlo]; Piedmontese: nebieul [neˈbjøl]) is an Italian red wine grape variety predominantly associated with its native Piedmont region, where it makes the Denominazione di Origine Controllata e Garantita (DOCG) wines of Barolo, Barbaresco, Gattinara, Ghemme, and Roero, together with numerous DOC wines. Nebbiolo is thought to derive its name from the Italian nebbia or Piedmontese nebia, meaning "fog". During harvest, which generally takes place late in October, a deep, intense fog sets into the Langhe region where many Nebbiolo vineyards are located. Alternative explanations refer to the fog-like glaucous veil that forms over the berries as they reach maturity, or that perhaps the name is derived instead from the Italian word nobile, meaning noble. Nebbiolo produces lightly-colored red wines which can be highly tannic in youth with scents of tar and roses. As they age, the wines take on a characteristic brick-orange hue at the rim of the glass and mature to reveal other aromas and flavours such as violets, tar, wild herbs, cherries, raspberries, truffles, tobacco, and prunes. Beaujolais (/ˌboʊʒəˈleɪ/ BOH-zhə-LAY, French: [boʒɔlɛ]) is a French Appellation d'Origine Contrôlée (AOC) wine generally made of the Gamay grape, which has a thin skin and is low in tannins. Like most AOC wines they are not labeled varietally. Whites from the region, which make up only 1% of its production, are made mostly with Chardonnay grapes though Aligoté is also permitted until 2024 (on condition the vines were planted before 2004). Beaujolais tends to be a very light-bodied red wine, with relatively high amounts of acidity. In some vintages, Beaujolais produces more wine than the Burgundy wine regions of Chablis, Côte d'Or, Côte Chalonnaise and Mâconnais put together.
The wine takes its name from the historical Province of Beaujolais, a wine-producing region. It is located north of Lyon, and covers parts of the north of the department of Rhône, the Rhône-Alpes region and southern areas of the department of Saône-et-Loire, in Burgundy. While administratively considered part of the Burgundy wine region, the climate is closer to that of the Rhône, and the wine is sufficiently individual in character to be considered apart from Burgundy and Rhône. The process of fermentation in winemaking turns grape juice into an alcoholic beverage. During fermentation, yeasts transform sugars present in the juice into ethanol and carbon dioxide (as a by-product). In winemaking, the temperature and speed of fermentation are important considerations as well as the levels of oxygen present in the must at the start of the fermentation. The risk of stuck fermentation and the development of several wine faults can also occur during this stage, which can last anywhere from 5 to 14 days for primary fermentation and potentially another 5 to 10 days for a secondary fermentation. Fermentation may be done in stainless steel tanks, which is common with many white wines like Riesling, in an open wooden vat, inside a wine barrel and inside the wine bottle itself as in the production of many sparkling wines. Chenin blanc (known also as Pineau de la Loire among other names) is a white wine grape variety from the Loire Valley of France. Its high acidity means it can be used to make varieties from sparkling wines to well-balanced dessert wines, although it can produce very bland, neutral wines if the vine's natural vigor is not controlled. Outside the Loire, it is found in most of the New World wine regions; it is the most widely planted variety in South Africa, where it was historically also known as Steen. The grape may have been one of the first to be grown in South Africa by Jan van Riebeeck in 1655, or it may have come to that country with Huguenots fleeing France after the revocation of the Edict of Nantes in 1685. Chenin blanc was often misidentified in Australia, as well, so tracing its early history in the country is not easy. It may have been introduced in James Busby's collection of 1832, but C. Waterhouse was growing Steen at Highercombe in Houghton, South Australia, by 1862.
It provides a fairly neutral palate for the expression of terroir, vintage variation, and the winemaker's treatment. In cool areas, the juice is sweet but high in acid with a full-bodied, fruity palate. In the unreliable summers of northern France, the acidity of under-ripened grapes was often masked with chaptalization with unsatisfactory results, whereas now, the less-ripend grapes are made into popular sparkling wines such as Crémant de Loire. The white wines of the Anjou AOC are a popular expression of Chenin as a dry wine, with flavors of quince and apples. In nearby Vouvray AOC, vintners aim for an off-dry style, developing honey and floral characteristics with age. In the best vintages, the grapes can be left on the vines to develop noble rot, producing an intense, viscous dessert wine, which may improve considerably with age. (Full article...)

The winery was founded by Jeff and Mary Stai, and opened in 2001. The Stais hired Scott Klann, a native of Murphys, who had over a decade of experience in the Calaveras County wine industry, as Twisted Oak's first winemaker. The original 10 acre (4 ha) vineyard on the 120 acre (48.5 ha) property was planted to Tempranillo, Grenache, and Graciano, grape varieties native to the Mediterranean regions of France, Spain and Portugal. The decision to plant Iberian grape varieties, uncommon in California, was in part due to a dinner that Stai and Klann attended at a Spanish restaurant in which they tried many Spanish wines that impressed them.
The winery's first vintage was 2002, when they produced 10 different wines, all made from purchased grapes. The wines were produced in a custom crush facility at the Olde Lockeford Winery in the town of Lockeford, California. The first vintage began a tradition of naming wines with exclusively non-alphabetic symbols (in a style often used to replace profane words in written English), such as the *%#&@!, a red blend of Mourvedre, Syrah, and Grenache grapes, and the %@#$!, a white wine made of Marsanne and Roussanne grapes (introduced two years later). The unusual wine names were inspired from the owner and winemaker's frustration at being unable to come up with a good name for the red blend.
